Don’t think crystallized honey is bad! Actually, it is a sign that the honey contains all the good things, like pollen and propolis. Chrystallized honey is the sugar separating from the water in the honey. When there is raw, unfiltered honey, those sugars build upon the pollen and propolis. Honey from overseas is often heated and filtered then blended to hide its origins. (Honey Laundering) If your honey has crystallized, consider it a sign you have a high quality honey! We will have local honey at the Oakwood Farmers Market, Saturday, 9-1!
